How to make it
- Sift 2–3 g through a fine sieve.
- Whisk 70 ml of water at 80°C. Quick M-strokes until it foams.
- Sip Straight from the bowl. That's all.
Once opened, reseal and keep in the fridge; best within two months.

Details
The workhorse, and it works two jobs. In milk it holds its colour and tea character through a full-size latte without being over-dosed. In the oven it stands up to heat and sugar where a drinking grade would flatten out.
